Auricularia (Judas ear, Auricularia polytricha) is valued for its wide range of bioactive compounds. It is also an important part of Asian cuisine due to its taste, appearance and consistency. In Auricularia we can find a large amount of minerals, vitamins, polysaccharides - beta glucans and fiber. It is also a source of essential amino acids, unsaturated fatty acids, antioxidant melanin and many other substances. According to Chinese medicine, it breaks Xue Yu (blood stasis), so it is useful during long car rides or plane flights. We grow our Auricularia on a substrate consisting of a mixture of sawdust, organic wheat bran, cane sugar and natural gypsum.
