PROCESS OF PRODUCTION
Pieces of good quality beef are first done free of fatty parts and tendons and cut into thin slices.
The cleaned meat is put into a special marinade, prepared according to a secret recipe.
The marinating is followed by hand placing on grates and drying.
Drying takes several hours at different temperatures and is accompanied by a smoking process.
In the final stage, the meat is cut by machine, divided into bags and packed in a special protective atmosphere thanks to an oxygen absorber. The whole process is under strict veterinary supervision.
