This style of roasting ends just before the second crack, when the beans are already completely unified in colour and roasted. City Roast is typically slightly darker in colour than Light Roast, but still retains some of the characteristics of a lighter roast, such as higher acidity and a milder flavour profile. Coffee roasted to City Roast grade presents a balanced combination of sweetness, acidity and full body.

If you prepare AlzaCafé coffee using other methods (V60, chemex), make sure you use the correct water/coffee ratio (15:1) and the water temperature should be 93 °C.

AlzaCafé Dominicana coffee beans from plantations located in the south of the Dominican Republic in the Barahona region, also known as Cruz de Barahona. The interesting thing about this region is that it stays at the same level all year round. Stable temperatures and the location of the plantations at high altitudes guarantee the perfect taste of the coffee beans. The fruits of this coffee are processed in a process called. in a wet way. At wet processing, the fruit is first soaked in tanks of water. After this step, the fruit is pressed through the crushing plates to remove the skins. Then comes the fermentation process. In the final stage, the coffee beans are dried either in direct sunlight or in special dryers.
