The Cafédirect BIO Mayan Gold Mexico SCA 82 ground coffee comes from growers from the CESMACH, ESF, Huatusco, Triunfo Verde and Tzeltal Tzotzil cooperatives. CESMACH is based in southern Mexico, where it was founded in 1990. It is located in the Triunfo Biosphere Reserve, a UNESCO World Heritage Site. It is surrounded by specific fauna and flora. Local farmers place great emphasis on ecology and impact on the planet. The cooperative saves native trees, recycles materials, uses organic fertilizers in cultivation and employs sustainable farming techniques, which has allowed it to create optimal conditions for growing organic coffee with a special taste and quality. Farmers pick the coffee by hand as it ripens. The coffee beans are extracted from the cherries using the washed method, i.e. by washing them in spring water and then drying them outside in the air and sun. The growing, harvesting and processing processes meet high quality standards.
