What does DELID mean?

This is a relatively sophisticated adjustment of the CPU itself. Intel is using a fairly common heat conductive paste between the chip and the heat transfer. Local overheating of the processor during overclocking is often a matter of seconds. Michal Mikle can safely "uncap" the processor, apply a better high-quality paste and then seal everything in its original form. The result is a noticeable drop in temperature during the maximum load.
