The Kai Shun Kagerou Nakiri knife is a specialised Japanese tool designed for the fast and precise preparation of vegetables. It is handmade in Japan and its blade uses a unique Dual Core technology that combines two types of steel. This helps the blade to maintain its sharpness for a long time. The blade is made of 71 layers of Damascus steel, which create a unique pattern on the surface. The ergonomic handle made of grey PakkaWood provides a comfortable and secure grip while you work.

Blade with Dual Core technology

The core of this knife's blade is made using Dual Core technology. This process involves forging two types of steel with different properties—hard VG10 steel and tougher VG2 steel. The resulting blade is composed of 71 layers of Damascus steel, which not only gives it a characteristic wavy pattern but also exceptional durability. This combination gives the blade a hardness of 61 (±1) HRC and helps it maintain its sharpness for a very long time. The double-edged blade then makes the knife easier to work with.

The knife is not suitable for the dishwasher. We recommend hand washing only and drying it immediately after each use.
