Blade and construction for professional performance
The core of the knife is its VG10 steel blade, which features a high hardness of 60 (±1) HRC and long-lasting sharpness. This type of knife is characterised by its single-bevel edge sharpened at a 45° angle, which enables precise, clean cuts when filleting. The hollow grind on the other side of the blade reduces friction and prevents ingredients from sticking. The full-tang construction, where the steel runs the entire length of the handle, contributes to the overall stability and perfect balance of the knife during use.
The knife is not dishwasher safe. After each use, wash it by hand with lukewarm water and dry it immediately. The edge requires regular sharpening on stones designed for single-bevel blades.
