Properties of cast iron

The body of the pan is made of cast iron, which is excellent at retaining and holding heat. Once heated, it transfers heat to the food smoothly and evenly, which is key to even baking. Cast iron resists high temperatures and withstands frequent use. Its surface also resists mechanical damage, such as scratches from metal utensils.
