Preparation

The basic rule of preparation is to pour one teaspoon of tea with 150 ml of boiling water in a porcelain container with a built-in strainer and lid. There is no exact guideline for how many leaves of which type to use in preparation. You have to discover the right dosage that suits you. Generally, one teaspoon per person per cup is recommended. We always brew tea leaves in a covered container to prevent the most volatile aroma component from escaping. In some countries, tea leaves are first steamed before being steeped in water. Since Georgian tea has a softer and more velvety taste, as it contains fewer tannins than tea from tropical countries, you can safely steep it for five (or more) minutes, ultimately obtaining the maximum amount of beneficial substances and a tasty tea without bitterness. For children, pregnant women and people who are sensitive to caffeine, we prepare tea using the second infusion method (so-called sophomore) that eliminates caffeine.
