How do they make everything taste so good in the restaurant? It is a balance of the four basic tastes. It's the same in our watering hole.
In every drop of our dressing you will find four basic flavours:
- Sugar - from natural sugars in ripe tomatoes
- Salty - carefully balanced to highlight and not overpower

Salt the lemon quarters with the peel and let them ferment. This releases essential oils from the essential oil and takes the natural acidity of the lemon up a level. The result is a truly amazing taste with a unique touch of freshness.

You may know the taste of umami from soy sauce, aged cheese or freshly grilled steak - we all love it, but no one can describe it exactly. It's not magic from a lab - it's nature's work. Fermentation releases natural glutamate, naturally present in tomatoes and garlic. This will highlight each ingredient and create a harmony of flavours.
