La Plantation red pepper
La Plantation red pepper is hand-picked and hand-sorted Cambodian pepper. It is harvested from the same Piper nigrum plant as the Kampot black pepper, but the harvest time or maturity level of the red pepper ball is different. Red pepper is fully mature and is harvested at the peak of the season during the dry season. This pepper is dried in the Cambodian sun for 2 to 3 days. This supports its fine fruity-sweet taste with hints of strawberries. Red pepper has a lower spiciness than black pepper and its special flavour can be appreciated not only when baking sweet dishes, but thanks to its taste reminiscent of strawberries it can also be used to flavour fruit salads. Roasted meats, of course, do very well with red pepper, and so do grilled vegetables.
