Thanks to this gentle process, instant freeze-dried coffee retains its rich aroma and full flavour. The coffee concentrate is first frozen to -40 °C, turning the water into ice. Sublimation then takes place - the water evaporates in a vacuum without melting, preserving valuable flavours and aromas. This process is more demanding and expensive, but the result is completely dry and lightweight instant coffee crystals made from coffee concentrate. Thanks to the freeze-drying method (from Eng. "Freeze drying) the coffee retains all its aroma and flavour and is much tastier than other methods (e.g. heat drying).
