Production begins with the harvesting of Chinese or Assam tea leaves. The next step is to wilt the tea leaves, which evaporates the excess water. Unlike black teas, the steeping process is short to avoid oxidation, which is undesirable in green teas. Oxidation is stopped by rapid heating, e.g. pan-frying, steaming or baking.
