The Rocket Espresso Mozzafiato Cronometro R is one of the premium home coffee machines. A pair of pressure gauges that display pump pressure and boiler pressure give the barista more control over the extraction process. The coffee maker has a boiler that increases thermal stability and saves energy by using thick-walled brass fronts together with insulation. This allows very comfortable operation when preparing milk drinks.It is possible to brew espresso and whisk milk at the same time. Steam is immediately available without waiting. The microprocessor controls the control of the water level in the boiler, its automatic draining and also provides indication of low water level in the water container. The coffee machine has a fully professional rotary pump. Using the PID control helps you make the right espresso without compromise. It is also equipped with a digital stopwatch to allow even better optimization of extraction time. You can also optionally connect the rotary pump coffee machine directly to the water supply and, if necessary, to the waste.

Direct connection to water and waste
The coffee machine can be connected directly to the water supply. In case of direct connection to water, it is recommended to connect a suitable water filter (softener) between the water source and the coffee machine. It is possible to switch the water source between the line and the storage tank. The connection to the water supply line is provided by the included 3/8" M pressure hose, to which it is necessary to install (purchase) a 3/8" M - 3/8" F reducer or to extend/connect the included hose as required. It is also usually possible to connect to the waste. On the body of the coffee machine (under the waste container) there is a hose with a diameter of 9 mm and also included is a silicone hose, inner diameter 9 mm, outer diameter 12 mm.

E61 head
In the 1960s, a new technology came on the market that soon became one of the most widely used principles for stabilizing the temperature of water in coffee extraction. The E61 head is connected to the water circuit (boiler), the water in the boiler then circulates through the E61 head chamber. The head is thus heated by the water from the espresso boiler and thus contributes to temperature stabilization during extraction. The technology is one of the most widely used technologies today.
Coffee machine head - professional size (58 mm)
As for the 58mm dimension, it's not a completely accurate indication of the size of the head itself. The professional head and the inner diameter of the lever are slightly larger, 60 mm. However, for every barista, the most important figure is the dimension that indicates the frother, which in this case is the 58 mm - that's why these types of coffee makers are known as professional head 58. Nevertheless, it is advisable to pay more attention to the choice of the base of the frother. Manufacturers are increasingly using filters that can use packers with a base diameter of up to 58.55 mm. It is therefore always necessary to check which filters are included with the machine or which the barista wants to use.
2 circuits dependent - HX (Heat Exchanger), heat exchanger
The coffee machine with the HX boiler system, i.e. the heat exchanger, allows very comfortable operation when preparing milk drinks (whipping milk). It is possible to brew espresso and whisk milk at the same time. Steam is immediately available without waiting. HX works in such a way that we have 2 circuits and the heating element is only in one of them - in the service boiler. The espresso circuit does not have its own heating element and the water in this circuit is heated by the other circuit (service boiler). The espresso circuit actually goes through the larger service boiler that heats it. Only the service boiler can be regulated. If you increase the temperature in the boiler (e.g. you want a stronger steam), this will also directly affect the temperature of the water in the espresso exchanger/circuit.
Boiler and three-way valve
A boiler is a container of a certain volume of water. The boiler can be heated actively by its own heating element or passively by another heat source. The larger the boiler volume and the more precise the temperature control technology, the more stable the espresso water. Water temperature control in the boiler is most often provided by a thermostat, electronic thermostat, preset or electronically, i.e. PID control. The three-way valve is a very important technical element in the equipment of a coffee machine. It opens/switches between the following paths - the hot water source for the coffee, the head of the coffee machine and the waste. When the coffee dispenser is switched on, the water supply to the head of the coffee machine is opened, the path to the waste is closed. When the coffee dispensing is switched off, the path between the head of the coffee machine and the waste is opened and the water source is closed. Thanks to this valve, the pressure in the head of the coffee machine is released after coffee extraction and the excess water is drained to waste. Based on this principle, it is also possible to carry out the correct maintenance of the coffee machine, the backflush.
Rotary pump
The rotary pump is used in professional coffee machines and in the higher class of home coffee machines. It is powered by a robust electric motor and, as the name suggests, works on the principle of rotation. It is possible to set the desired pressure directly on the pump using the bypass screw. The calibration screw is usually brought outside the body of the coffee machine and the user can conveniently calibrate the pressure. Calibration is done by inserting a blank filter (as in backwash) into the lever and switching on the water discharge. The pressure gauge displays the current set pressure, which you can decrease or increase by turning the screw. As a rule, you set it to 9 bar. The rotary pump has a very quiet and refined operation. The rotary pump coffee maker can be connected directly to the water supply, but when connecting to the water supply, it is strongly recommended to use a suitable water filtration between the water source and the coffee maker. Home coffee machines with a rotary pump usually have a water reservoir, so it is possible to switch the water source between the reservoir and the fixed connection.
Water tank
All home coffee machines have a water tank. It is recommended to insert a suitable water filter (softener) into the water tank. It is recommended that the water tank is thoroughly flushed at regular intervals. Domestic coffee machines with a rotary pump usually have a connection to the water supply in addition to the water tank, so it is possible to switch (mechanically or electronically) between the water source of the tank and the fixed connection.
Extraction time, shot timer
An important parameter during coffee brewing is the extraction time, i.e. the contact time between the coffee and the water. Generally, the extraction time for espresso is between 20 and 30 seconds. When making espresso from lighter roast coffee (new roasting trends), the extraction time can vary between 30 and 40 seconds. It is advisable to keep track of the extraction time during espresso preparation; more equipped coffee machines with a display have this timer, making it very convenient for the barista to keep track of the time.
